Our business model and sustainability plan.  

Our goal is to be a small batch, handcrafted spirit distillery. We will do this in the most ecologically sensitive, resource conservative and sustainable way possible. Our intention is to use the finest ingredients available and locally sourced. We will provide living wage jobs and create the best work environment possible.  

We will recycle all our solid waste and process water through a series of 4 processes: Filtration, biodigestion, composting, and vermiculture. CO2 produced during fermentation will be captured and introduced into the greenhouse where the plants will use it during photosynthesis and produce O2 (oxygen.)  

Filtration will separate the solids from the liquid. The liquid will continue through finer grades of filtration until it reaches a point it can be pH adjusted and reintroduced to the mashing process. Solids will be fed into a biodigester to be broken down and to reduce their BOD and COD. This process also produces a byproduct of methane.   

The solids will then be pressed to extract the water and then be mixed into compost and where worms (vermiculture) will break these solids down even further making the nutrients more accessible to plants.  

The methane will be used to heat our greenhouse reducing the gas to CO2 and water, both of which will be absorbed by the plants in the greenhouse.  

CO2 produced during fermentation will also be captured, scrubbed, compressed and then liquefied to be made available for other uses from carbonation of beverages to industrial uses like shielding gas during welding.  

Through these efforts, we will provide a business model that can be used to demonstrate ecologically sensitive business practices. Our goal is to leave the environment better than when we started.
